Alanna Sapwell, one of Australia’s top young chefs, visited Haddon Rig in December as part of a shoot for MLA’s online publication Rare Medium. Former chef at acclaimed Sydney fish restaurant Saint Peter, Alanna has been appointed Head Chef at a new venue within the Howard Street Wharves precinct in Brisbane. Arc Dining & Wine Bar will focus on working closely with farmers and producers, making the best use of local produce and whole animals.
Having only launched Haddon Rig Merino quality meats this year, it was a real boon to have Alanna visit Haddon Rig to learn about what we do, our merino sheep and to cook with our product.
Alanna was very interested in the way the Mitchell Grass pastures, Macquarie River landscape and expert management practices influence the flavour and quality of our product. We prepared a range of secondary cuts for Alanna to cook over the barbeque grill, over fire and smoked over fresh Red Gum leaves from the banks of the Macquarie River.
We were impressed with Alanna’s approach to using whole animals, learning about the process to produce and supply quality products, and taking the time to visit Haddon Rig. We are planning on visiting Alanna in Brisbane and experiencing Arc Dining & Wine Bar and prepared to roll up our sleeves but understand that will probably be to wash dishes.
